Not long ago, I was asked to bring something that was gluten-free to a special event. Luckily, I had a package of Mightylicious Vegan Chocolate Brownie Mix that I was intending to try. I received the brownie mix along with special gluten-free flour. I wasn’t ready to try the flour but this was the perfect time to see if the brownies were as good as promised. (Spoiler alert: The brownies were so good, I purchased four addition packages of the brownie mix).
I began by gathering the items the recipe required:
Vegan yogurt, Vegan butter or coconut oil, Vanilla extract, Chocolate chips or nuts
And then I proceeded.
I started with the yogurt and added the melted butter and the vanilla extract.
Then I opened the package of the Vegan Chocolate Brownie Mix and mixed it all together. The chocolate chips were mixed in. I decided not to use the nuts because some of the people at the event were allergic to nuts.
Now that the mixture was complete, it was ready to be placed in a pan lined with parchment paper and moved into the pre-heated oven (375 degree) for about 25 minutes. I could not wait to find out how the brownies would taste.
I watched carefully, not wanting to overbake or burn the brownies. When they began to smell delicious, I looked at them and decided to remove them from the oven. I let them cool just a little and cut the into pieces that were small because they needed to serve a large group of people. And many people enjoyed the brownies and wanted the recipe.
How did Mightylicious come about?

After lots of trial and error – many many months in the kitchen – she finally came up with the perfect recipe for GF cookies.
